Food safety is a RCL FOODS responsibility and not a competitive advantage. It is every consumer's right to purchase safe food. Good quality means: The product must be: Fresh Tasty Look good Smell good Processed according to customer's requirements e.g. specific cuts etc. Safe for human consumption: the product must be safe to eat, this means that is must be free from any foreign matter that can cause injury or illness and free from harmful bacteria once it is cooked. The above product requirements are vital to the growth and survival of RCL FOODS. To ensure that these requirements are met and sustained, a Food Safety programme must be implemented throughout the supply chain..
[Audio] Food Quality is the part of good processing practices that is concerned with: Sampling Specifications Testing Documentation Release procedures This ensures that the necessary and relevant tests are carried out and that products are not released for sale or supply until their quality has met the agreed and defined specification and customer requirements..
[Audio] Food safety can be defined as Handling, Preparing and storing food in a way that best reduces the risk of consumers becoming sick from foodborne disease. The principles of food safety aim to prevent food from becoming contaminated and cause food poisoning. With this in mind ensuring that food is safe for human consumption, is likely the most critical part of food preparation process. This ranges from what is called farm to fork. Meaning from the farms all the way to your plate..
[Audio] This means that food safety is important at Home As well as in the restaurant Retail store Or food factory The purpose of food safety is to ensure that RCL FOODS produces and delivers products that meet three basic requirements, namely products that are. Number one, it must be free from contaminants, meaning RCL FOODS products must be free from any foreign matter, substances or micro-organisms which could have quality, disease or safety implications. Number two, it must have adequate shelf life, which means that RCL FOODS products must be safe to consume until the "best before" or expiry date. And lastly, it must be safe for consumption, meaning, Consumers do not want to be injured or harmed, become ill or die when eating or consuming RCL FOODS products..
[Audio] Food safety is important for the following reasons. If food or drink is not safe to drink, you can eat or drink. The easiest example of this is safe drinking water, you would never drink water that does not come from a reputable source. The very same principle applies to food.
[Audio] Good Food safety ensures that customers are always satisfied and RCL Foods brand reputation is kept good. Another benefit of good food safety ensures that RCL FOODS is compliant to regulations and legal requirements. Examples of poor food safety includes food poisoning outbreaks that may results in hospitalization and even death, it also includes loss of income and increased consumer and customer complaints..
[Audio] There is an ever increasing awareness of food safety by the general public and reporting on food recalls and outbreaks more often. Reviewing the updated stats the World Health Organisation An estimated 600 million – almost 1 in 10 people in the world – fall ill after eating contaminated food and 420 000 die every year, resulting in the loss of 33 million healthy life years Children under 5 years of age carry 40% of the foodborne disease burden, with 125 000 deaths every year. Foodborne illnesses are usually infectious or toxic in nature and caused by bacteria, viruses, parasites or chemical substances entering the body through contaminated food. Foods involved in outbreaks of salmonellosis include eggs, poultry and other products of animal origin. Foodborne cases with Campylobacter are mainly caused by raw milk, raw or undercooked poultry and drinking water. E.Coli is associated with unpasteurized milk, undercooked meat and contaminated fresh fruits and vegetables. Listeria is found in unpasteurised dairy products and various ready-to-eat foods and can grow at refrigeration temperatures. Chemical contamination can lead to acute poisoning or long-term diseases, such as cancer. Food safety is clearly a global concern that covers a variety of different areas of everyday life.
[Audio] The principles of food safety aim to prevent food from becoming contaminated and causing food poisoning. Food safety can be achieve in five basic pillars. Proper cleaning and sanitizing of all surfaces, equipment and utensils. Maintaining a high level of personal hygiene especially hygiene Keeping foods cold when needed and keeping food hot when required Storing foods in a way that prevents cross contamination Cooking, reheating and cooling of foods including prevention of cross contamination during preparation process.
[Audio] Foreign material of any kind can potentially introduce a physical hazard in a food product. These range from natural sources such as rocks, wood, or product components such as shells or bones, to processing components such as metal shavings, equipment parts, or glass pieces from packaging materials. Other potential foreign materials can also be introduced to the finished product at many stages throughout the production of the food such as broken light bulbs, operator contamination, or pest contamination. A robust foreign material control program is essential to ensure consumer health and safety. Failure to implement an effective foreign material control program may result in contaminated food products making their way to grocery store shelves and consumer plates..
[Audio] The term Cross Contamination refers to unintentional transfer of microorganisms or chemical substances from one food to another. The transfer can occur directly when two food come into physical contact or one drips onto another; or indirectly through intermediate vehicle, such as work surfaces, cooking utensils or the hands of the person handling and preparing the food. In the latter case contamination is a two stage process. First, the microorganisms or substances, present in the food are transferred to hands, surfaces or utensils. Then in turn these are transferred to other foods by contact. Cross contamination poses a risk if it resulting in the transmission of pathogenic microorganisms which under certain conditions can cause foodborne infections, or substances that can cause, allergies or intolerances To prevent cross contamination, one need to ensure the following is practiced. Good personal hygiene. Colour coding of utensils. Clean as you go. Proper waste management. Storing raw material, product and packaging correctly..
[Audio] The term foodborne illness covers all illnesses that are caused by eating contaminated food. And illness that brought on by allergic reactions to food. So, the contaminants can be allergenic, Biological, chemical or physical..
[Audio] Food poisoning is a specific type of foodborne illness that is connected to eating certain bacteria, such as E.coli for example. The symptoms of food poisoning can last as little as an hour or as long as several days. There are a few different symptoms including; Nausea, stomach cramps or pain, Diarrhea, Vomiting, and Possibly a fever And even though the healthiest of people can get food poisoning there are certain groups of people who are more at risk than others, because they have weaker immune systems. This includes young children, the elderly, pregnant women and unborn babies, and people who are already ill or recovering from an illness. For these groups especially food poisoning is very dangerous and can even be fatal. There are also foods that are known as high risk, meaning they are more likely to cause food poisoning because they are the ideal place for the harmful bacteria to multiply. High risk food are usually three things; Moist. Rich in protein, And ready to eat. For example you need to keep a special eye on things like shellfish, precooked meat such as chicken and ham, milk, eggs, and dairy, and foods that contain these ingredients like soft cheese, cream and mayonnaise. High risk foods need to be handled and stored with particular care. They should also have a use by date on the label..
[Audio] Food Safety Culture is the shared values, beliefs and norms that affect mindset and behaviour toward food safety throughout an organization. It is the result of the commitment from leadership and focus across the organization. A good food safety culture can protect: Consumers from foodborne illness Brand's reputation The business from financial loss Has a management team with a strong commitment towards food safety Encourages open communication throughout the organisation Discourages unethical and unacceptable behaviour Seeks to empower people.
