[Audio] Welcome you all, I am S.Gobinath M.Sc (Food Science Technology and Nutrition), Department of Food Science & Nutrition, Periyar University, Salem. Now, I am going to discuss about Fonio Millet. A small amount of fonio is grown, especially in West Africa on plateaus or intermediate elevations with heavier soils than the surrounding savannah and slightly more suitable rainfall. Fonio now grows in farmer's fields in a huge region that stretches from Senegal to Chad. According to an investigation of the protein fractions, fonio grain has a very good nutritional quality. Black fonio is known as iburu (Digitaria iburua) while white fonio is known as acha or "hungry rice" (Digitaria exilis Staph). Depending on the variety, this little grass, which grows to a height of 30 to 80 cm, is extremely hardy, able to withstand periods of drought, and matures in 70 to 150 days. Unlike other grains, the fonio proteins are high in the amino acid methionine, which is important. Like other millets, fonio has a number of established health advantages, including as helping to manage and prevent diabetes. Fonio is adapted to severe settings and has a brief growing season. Excellent gastronomic and nutritional qualities can be found in the cereal. The tiny, challenging-to-peel grains are the only downside, making processing time-consuming. Thankyou!.
