BEVERAGES AND BEVERAGE SERVICE. By Terrance Manyamba.
CLASSIFICATION OF BEVERAGES. Alcoholic beverages are classified in three main ways. These three are Beers, Wines and Spirits.
BEERS. Beers are any alcoholic beverage that is derived in whole or in part from malt, malt substitute and containing an ABV equal or less than 15% Ingrediants that qualify as a malt or malt substitute include beans, glucose, grains, molasses, rice and sugar There are different types of beers. These are Ales, Lagers and Stouts & Porters.
LAGERS. PALE LAGERS – these are the most popular lagers in Canada and the US, as they include Bud Light, Corona, Budweiser etc. These are light and crispy in flavour, and pale gold in colour. They’re typically lower in alcohols as well. Pale lagers are great newcomers and pair well with almost any food stuff AMBER LAGAR – these are made by toasting malted barley slightly longer DARK LAGER – the malted barley here are toasted to the max and are dark in colour PILSNER – these are more carbonated variation of the pale lagar.
ALES. PALE ALE – these are the most consumed craft beer on the planet and have an ABV of between 4-6% AMBER/RED ALE – the malted barley in this ale are fried a little longer compared to the pale ale, causing the colour to turn copper to redish brown KOLSCH- Kölsch is a light-coloured, light-bodied variation of a pale ale. INDIA PALE ALE - are famous for their hyper bitter taste and ‘hoppyness’ and have ABV of between 5-10% BROWN ALE - With mid-level ABVs and IBUs, brown ales are delicious, malty beers without all the hoppy bitterness.
WHEAT BEER - As its name suggests, wheat beers rely on a mix of barley and wheat, and while they’re typically made into ales, wheat beers can also take the form of a lager BELGIAN ALE - ItS tough to describe them closely, as their ABVs, IBUs and colours can vary so much. Under the Belgian Ale category they could anything from fruit beers to hoppy ales..
STOUTS AND PORTERS. OATMEAL STOUT AND PORTER- Made with oatmeal, the oatmeal stout is a thick-bodied ale that feels like silk in your mouth. It’s smooth, sweet, and very rich. IMPERIAL STOUT AND PORTER- These beers can be very high in ABV, and slightly more bitter than its oatmeal stout cousin.
WINES. Wines are made through a process of harvesting fruit, crushing, fermentation and then ageing them The alcohol content in wine ranges from 5.5% to 25% ABV Wines contain grapes as their main ingredient.
TYPES OF WINE. CARBENET SAUVIGNON CHAMPAGNE, PROSECCO AND CAVA MERLOT CHARDONNAY PINOT NOIR PINOT GRIGIO ROSE RIESLING SAUVIGNON BLANC.
SPIRITS. Spirits are beverages with an alcoholic content of over 18% They contain no or low amounts of sugar Spirits are produced by distilling an already alcoholic liquid (wash) produced by fermentation.
TYPES OF SPIRIT. BRANDY- these are distilled wines GIN- this distilled spirit normally come from grains and molasses RUM- this is made by distilling fermented sugar and water VODKA- this distilled spirit is made from grain, potatoes and other agricultural products WHISKEY- this distilled spirit is made from natural raw materials, cereals, water and yeast.
CLASSES OF LIQUOR LICENCES IN BC. FOOD PRIMARY LICENCE- this is for selling liqour by the glass at businesses(restaurants) where the primary purpose is to serve food LIQOUR PRIMARY LICENCE- this is for selling liqour by the glass at businesses where the primary purpose is to sell liqour(bars, stadiums etc) as well as other businesses that wish to serve liqour as an additional service to their primary business(spas, salons etc) MANUFACTORER LICENCE- for making liqour at a winery, brewery or distillery. Manufacterers can also apply to add a lounge endorsement to their licence.
