INTRODUCTION. Lime is a citrus fruit, and the peel is known as zest . Lemon peels are commonly used to enhance the flavour of baked goods, salads, and yogurt. Some people grate the frozen zest and add it to soups, drinks, dressings, and marinades. Others dehydrate the peels by cutting them into strips and baking them in the oven before adding them to the tea..

BACKGROUND OF THE STUDY. Since the pandemic began, my mother has learned about the health benefits of lemon water and has been drinking it every morning. As a result, we always keep lemons in our refrigerator. Strawberry jam is the most popular type of jam. Unfortunately, strawberries are expensive because there are only a few places in the Philippines where you can find them; if you can't find them in the Philippines, you'll have to buy them from overseas, which is a bit pricey, especially for us Filipinos..

STATEMENT OF THE PROBLEM. This study aims to find out if lemon peel can be a component in making jams ; specifically to answer the following questions below: 1. Does the concentration of lemon peel jams affect its: A. Taste B. Colour C. Texture D. Odor 2. Can the Lemon peel jams serve as a substitute for the other commercial jams? 3. Is there a possibility that lemon peel jams will be accepted as one of the jams in the Philippines?.

SIGNIFICANCE OF THE STUDY. Lemon peels are also not expensive because this part is commonly thrown in the trashcan after using the lemon itself. Even still, lemon peels still have many health benefits. It is very easy to make jams and if you make lemon peels as a substitute flavour for strawberries, your capital or expenses will be lessened..

INGREDIENTS. Lemon peels Sugar Salt Lemon juice Water.

PROCEDURE. Chop the lemon peels into squares, about 4 centimetres height and 2 centimetres width. Put it in boiling water and stir it for about 5-10 minutes. After boiling, take the water out and let it cool down. Cover it in sugar and leave it overnight. After leaving it overnight, put it in a hot pan and add 2 tbs of lemon juice. Stir it well until it’s thick enough for your liking. Taste it, if it’s too sweet add more lemon juice but if you think it doesn’t have enough sugar then add some. Lastly, enjoy your jam and put it on toast or store it in the fridge..
